Spiced Sweet and Sour Prawns

This is a 10 minute meal, super easy and really satisfying. The spices in the chutney add a special edge and I love the heat and colour the chilli brings but you can leave it out if you prefer. Serve with rice.

Ingredients
  • 250g large prawns, shelled and deveined
  • 1 tbs. groundnut or vegetable oil
  • 2 cloves garlic, chopped
  • 1 small red onion, cut into 1½ squares
  • 1 small red capsicum, cut into 1½”squares
  • 4 tbs. The Spice Tailor Original Mango Chutni
  • ¼-½ tsp. red chilli powder or to taste
  • Salt and freshly ground black pepper to taste
Method
  1. Heat the oil in a wok or large non-stick frying pan. Add the garlic and cook for 30-50 seconds or until they small cooked.
  2. Add the onions, peppers and seasoning and cook for 3-4 minutes over a highish heat.
  3. Add the prawns and cook for a minute and add the chutni and chilli powder. Stir together well and cook for another minute or until the prawns are cooked through.
  4. Taste and adjust seasoning.
