Mango Chutni Mayo

Ingredients:

  • 1 pack of The Spice Tailor Original Mango Chutni
  • 2 tbsp mayonnaise
  • ½ red chilli - deseeded and chopped or to taste.
  • ¼ tsp white wine vinegar or cider vinegar
  • 1½ tsp soy sauce

Crispy Mushroom Lettuce Bites

Slaw Ingredients:

  • 100g red cabbage - finely sliced
  • 1/3 red onion - finely sliced
  • 50g carrots - peeled and julienned
  • Salt to taste
  • ½ lime - juiced or to taste

Other Ingredients:

  • 8-10 small shitake or 2 Portobello mushrooms – stalks removed and cut into thick slices
  • 1 egg - beaten
  • 20g plain flour seasoned with salt and pepper and ½ tsp smoked paprika
  • 30g dried breadcrumbs or Panko breadcrumbs seasoned with ½ tsp smoked paprika
  • 2 gem lettuces - leaves, trimmed and washed
  • 3 tbsp veg oil for frying
Method
Mango Chutni Mayo
  1. Put all the ingredients into a food processor and blend until smooth.
  2. Serve with crispy mushroom lettuce bites
Crispy Mushroom Lettuce Bites
  1. Mix all the ingredients for the slaw and leave aside until needed.
  2. Crumb the mushroom slices - dust into the flour, dip into the egg and coat into the breadcrumbs.
  3. Heat the oil in a frying pan and pan fry the bread crumbed mushrooms until crispy - 2 minutes on each side. Drain on kitchen paper.
  4. Serve the crispy mushrooms on a gem lettuce leaf, topped with some slaw and drizzle with the mango chutni mayo.
